The new tasting menu at Maras

At The Westin Lima Hotel & Convention Center, Maras restaurant offers a fine dining proposal that has already made a place for itself on Lima’s signature gastronomic route. And even more so now that it is inaugurating its new tasting menu.

The Maras concept

Designed by its executive chef Anthony Macedo, the concept behind this tasting menu can be described as the meeting of tradition, avant-garde, and sustainability. Maras is committed to Peruvian cuisine with avant-garde techniques and a twist on traditional dishes: its ingredients propose a journey through the Peruvian coast, jungle, and mountains.  
Its sustainable vision is expressed through several of its ingredients. The menu works with catch of the day, as it looks for the product that the sea gives that same day without having to force the purchase or consumption of a specific product. The fan shells come from hatcheries to ensure that the sizes and reproduction dates are being respected, thus avoiding predation. The tubers have been grown organically in Cusco. 
The cocoa used in the desserts is acquired from a producer company that trades with communities in the Amazon, and the same is true for the collection of honey, which is part of their sweet dishes.   
Maras is characterized by a more daring bet, which was recognized by the recent gastronomic awards of Somos magazine, which chose it as the best hotel restaurant. The special experience of its new tasting menu is in line with the general proposal of Maras, which is expressed in its elegant and cozy atmosphere, either inside the dining room or on the charming terrace lit by lanterns. 

Step by step

The tasting menu begins with the Abrebocas. The coastal course serves a crunchy yuyo, cured tuna and citrus aioli; the highlands are represented by a mille-feuille of tubers; and the jungle and its pantry are present with a sweet and sour cocona gel, jerky salt and chalaca (zarza).  
As main courses, the experience includes a festival of marine flavors, with shrimp tartare and tiradito; the pastel de choclo and grilled paiche complete the experience. After a cone of sorbet to cleanse the palate, comes the duck with mellow rice, one of the most awaited dishes of the evening.  
The happy ending comes in the form of a 100% cocoa dessert, with nibs, chestnuts, cocoa mucilage honey and chocolate mousse; in addition, there is the Honey and flowering, a combination of red fruits, high jungle honey, chamomile, and lemon. With this, the new tasting menu aims to transmit the essence of Maras and take the diner on a sensory journey.
